Paleo Fried Chicken


I've been eating mostly paleo for a couple of weeks now. I call it Paleo on a budget because I cannot always afford organic or a certain type of food. I try to keep it pretty basic.  I visit Farmer's Market every Saturday and try to eat veggies everyday.

Today I felt like fried chicken so I experimented with a made up version of my own fried chicken. So far I have lost 8 lbs. 

Fried Chicken

Chicken Tenders
Almond Flour 
1 egg & a bit of milk whisked together

I simply put a few tablespoons of coconut oil in a frying pan on medium heat. Then I coated the chicken tender in the egg/milk mixture, then coat both sides of chicken with the almond flour. Fry in skillet until chicken is cooked through! We all loved it!

Herbed Green Beans

I love to saute' my fresh veggies in olive oil and the tapestry of herbs from spice of life. Once you eat them this way you will never go back! :)
