So I guess I kinda have a "thing" for muffins. I make them a lot, they seem to be a simple healthy breakfast that I can get on the table fairly quick. This morning I was craving some and had some homemade applesauce thawed out but then it hit me that I had no eggs. When our chickens aren't laying we buy them from our neighbors and they are SO HUGE! The lid won't even come close to closing on the X-Large egg carton.
I love the search option on Allrecipes to search for certain ingredients and leave out others and here is what I found: Applesauce Wheat Blueberry Muffins. This recipe did not have the grandest of reviews so I doubled the milk and added some sweetner....
Here is my version below:
Chocolate Chip Whole-Wheat Applesauce Muffins
1 cup flour
1 cup whole wheat flour
3 tsp. baking powder
1/2 tsp. salt
1/2 cup milk
1 cup sweet applesauce
1/2 cup packed brown sugar
3/4 tsp. cinnamon
1/2 cup vegetable oil
1/2 cup chocolate chips
I sprinkled the tops with sliced almonds and baked at 375 for 20 minutes. Delicious hot out of the oven and wonderfully moist later on throughout the day.

Another immune booster that I am trying out for my family is Black Elderberry extract, I have done a lot of reading and it is scientifcally backed to boost the immune system. I read that the brand really does matter on this and Nature's Way seems to be the best, I bought mine from Amazon. NOTE: As I am pregnant I am not taking the elderberry, my midwife told me I should avoid it during pregnancy as I have had issues in the past keeping baby in full term.
I use the same elderberry syrup with my kids during cold season. Last night I was able to purchase some elderberry tea (in bags) and plan on drinking some as an immunity booster.
