Tasty Blueberry Muffins


Having a lot of yogurt in the fridge and some soy flour I wanted to make something, this is what I stumbled upon.......Tasty Blueberry Muffins.  I found the original recipe here.  I liked the fact it wasn't loaded with lots of sugar. My version below:

Tasty Blueberry Muffins

Ingredients:

1/3 cup soy flour
1/3 cup sugar
1-1/3 cups wheat flour
3/4 tsp. salt
1 tsp. baking soda
2 large eggs
1 cup vanilla yogurt
1 tsp. vanilla
1/3 cup light oil, canola
3/4 cup blueberries, or raisins, or dried apricots (I had blueberries on hand and used those)

Mix all ingredients.  Spray muffin tin, fill 3/4 full, baked at 350 for 25 mintures.


These are great with cream cheese!

Sun-dried tomato, spinach, cheese Omelet = Divine! :)



Trying for a healthier lunch today I realized I had most of the ingredients to make this.  Mine turned into scrambled eggs but it was still simply marvelous!

My version below:

Ingredients:


  • 2  handfuls spinach
  • 2 tablespoons butter
  • 8 pieces smoked sun-dried tomatoes, chopped
  • Salt & Pepper to taste
  • 6 large eggs
  • Feta cheese and Romano cheese
Directions:

Toss 2 T. butter in skillet, cook tomatoes in butter for a couple of minutes add salt and pepper.  While the tomatoes are cooking chop up the spinach add to the skillet and cook for about 4 mintues.  Whisk the eggs and pour over spinach and tomatoes.  Sprinkle on as much feta and romano cheese as you like, let eggs cook and set a bit then scramble a bit.  I usually make omelets but I didn't want to broil this one so I just scrambled it. VERY GOOD! :)


I Sprinkled some basil on top, yum!

Sausage Bake

I was looking for a breakfast bake the other morning that didn't have to sit in the fridge over night because I wanted to make it right then. I found this one, I always like to search through the B & B recipes, they are usually sooo good.  

I found this particular sausage bake from the 1882 Aleksander House Bed & Breakfast, recipe found here


My version below:

Sausage Bake

Ingredients: 

1/2 cup butter
1 lb country sausage
3/4 loaf of French bread, cubed
2 tsps dried Basil

1-1/2 cup shredded cheddar cheese

7 eggs 
2-1/8 cups milk

Melt butter. Pour into large rectangle casserole dish. Brown sausage and set aside. Layer half the cubed bread in dish and sprinkle with Basil and cheese. Sprinkle browned sausage over herbs and cheese. Layer rest of bread.Beat eggs well and add milk. Pour over contents of baking pan. Bake at 350 degrees for 1/2 hour or until set. Cut into squares and serve hot.

So delicious, my family loved it!
